Cranberry sauce provides the perfect balance to the rich and often greasy trimmings of Christmas dinner . It should therefore be tart rather than sweet, and can easily be made fresh. The method below is simple and provides a self-contained task for those family members who only enter the kitchen on special occasions.
INGREDIENTS
THE SAUCE
250g of fresh cranberries
100g caster sugar
1 small glass of dry white wine
a dash of port
the juice of half a lemon
POSSIBLE SEASONINGS
lemon or other citrus zest
mace
cardamon
allspice
black peppercorns
juniper berries
THE METHOD
- Simmer the cranberries in a saucepan with the sugar, wine and port.
- You want the berries to soften, and some of them to burst. This will take around 10 minutes over a medium heat. While they soften, add the seasonings of your choice.
- Take the sauce off the heat and set it aside to cool, or if you prefer, serve immediately.
